Today’s menu features organic prune and Vanilla Bircher Meusli as well as our famous, homemade Tzatziki Dip + a gorgeous dinner of Peanut, Chilli and Coconut King Prawns with Organic Brown Rice Noodles, Pack Choy, Julienne Mange Tout and Baby Corn.
Breakfast
Organic Prunes and Vanilla Bircher Muesli
Serve cold or heat in the microwave for 2-3 minutes  
Morning Snack 
Greek Tzatziki Dip with Red and Yellow Pepper Crudités
Lunch
Beetroot, Parsnip, Horseradish and Ginger Soup with Organic Rye Bread and Cream Cheese
Heat in the microwave for 4-5 minutes stirring half way
Afternoon Snack
Fresh Plums and Sunflower Seeds
Evening Meal

You simply have to try the Chicken and Portobello Mushrooms Pot with Steamed Cauliflower, Roasted Courgettes and Brown Rice. It’s a new meal for us and is definitely my favourite so far in 2013. The thick sauce is so tasty, I just don’t have the words to describe it!

Banana and Sultana Soya Bircher Muesli
Serve cold or heat in the microwave for 2-3 minutes  
Morning Snack 
Garlicky Roasted Aubergine Dip with Organic Oat Cakes
Lunch
Asian Duck Salad with Organic Rice Noodles, Radishes, Mange Tout, Bean Sprouts, Baby Corn and Thai Chilli Dressing
Serve cold or heat in the microwave for 3-4 minutes. If heated please remove the dressing pot before placing in to he microwave
Afternoon Snack
Fresh Grapefruit and Orange Segments with Black Sesame Seeds
Evening Meal
Celeriac Mash topped Lentil Pie served with Steamed Spring Greens and Broccoli Florets
Heat in the microwave for 4-5 minutes until piping hot

Today we look at an example menu with the included nutritional content. This plan is for a male, 85Kgs and around 35 years old, that exercises regularly and is looking to lose some excess weight. The total caloric content is around 1300 cals. Our head chef is an expert in nutrition after many years in the industry and designs each plan according to our client’s requirements.
Today's menu features Tamari Soya Sauce Marinated King Prawns with Puy Lentils amongst other serious delights.

Soya Yoghurt topped with Mixed Seeds and served with Poached Apples and Fresh Blackberries

Soya Cream and Mustard Chicken  - A TDF recipe     
This is genuinely one of the best meals I have ever tasted and I have tasted a lot of meals, the blend of flavours in the sauce is just incredible.
This recipe is adapted from The Pioneer Woman and the original can befound here.
Ingredients
4 whole Boneless, Skinless Chicken Breasts
2 Tablespoons Olive Oil
2 Tablespoons Butter
3 whole Garlic Cloves, Minced
1 cup Brandy (or White Wine If Preferred)
1 Tablespoon (heaping) Dijon Mustard
1 Tablespoon (heaping) Grainy Mustard
1/4 cup (to 1/2) Soya  Cream
1/4 cup (to 1/2) Chicken Broth
Salt And Pepper, to taste
Preparation Instructions
*Amount of cream and broth has slightly decreased; add more as needed.
Cut the chicken breasts in half lengthwise so that you have eight smaller, thinner chicken cutlets. Salt and pepper both sides.
Heat oil and butter in a large skillet over medium-high heat. Cook cutlets on both sides until nice and golden brown and cooked through. Remove chicken from the skillet and keep on a plate.
Reduce the heat to medium. Add the garlic to the pan and saute it for a minute, stirring to make sure it won't burn. Next pour in the brandy (or wine if using) being careful if cooking over an open flame. Then just let the booze bubble up and cook until it's reduced by half.
Throw in the mustards and stir to combine, then pour in the cream. Stir in chicken broth, adding more if the sauce seems too thick. Taste sauce and adjust whatever you think it needs. Add chicken breasts back to the pan, nestling them into the sauce. Allow sauce to cook for another few minutes, shaking the pan if needed to move things around.
Serve chicken with a green salad, spooning the sauce over the top.
