Gluten Free Brownies

This is a recipe we use regularly in our gourmet diet food delivery plan. It originally came from www.allrecipes.com.au and is a healthy alternative to sweet snacks whilst still being delicious.

Ingredients:

400 gram can butter beans (drained)
2 eggs
2 tablespoons oil
1 teaspoon vanilla essence
2 tablespoons milk
1/2 cup (60g) cocoa
150g hazelnut or almond meal
3/4 cup (125g) brown sugar
1 teaspoon baking powder
Icing sugar (optional)

How to:

Prep: 10 minutes | Cook: 25 minutes

1. Preheat oven to 160 degrees C. Grease and line a slice tin.
2. Blend wet ingredients together and mix well into dry ingredients.
3. Pour into lined slice tin. Bake in preheated ovwn for 25-30 mins.
4. Let cool in pan before slicing. Dust squares with icing sugar

Happy Valentine’s day everyone. Here at TDF Towers, the chef and I have struck up quite a relationship. We’ve been married for 3 years so it’s about time! That’s right, TDF is a real couple’s labour of love and that means you get the best service imaginable.
Today’s example menu plan features a very special coconut dhal for you delectation.

Free Range Egg Spread with Organic Wholegrain Rye Bread and Fresh Tomato Wedges

Morning Snack
Plums and Pumpkin Seeds

Lunch
Lightly Smoked Salmon, Dill and Horseradish Pate with Baby Potatoes, Asparagus Tips, Radishes, Cucumber and Lemon Wedge

Afternoon Snack
Tomato Salsa with Raw Vegetable Crudités

Evening Meal
Coconut Dahl served with Steamed Broccoli Florets, Baby Carrots, Roasted Chestnut Mushrooms and Garden Peas

Despite getting absolutely soaked this morning and yesterday, I managed all the deliveries without fuss. We also discovered that the branded cool bags we use are waterproof. Luckily.
Today we have a non-dairy, gluten free example for you.
Breakfast

Roasted Courgette, Red Pepper and Spring Onions Mini Omelettes
Serve cold or heat in the microwave for 2-3 minutes 
Morning Snack 

Clementines with Sunflower Seeds
Lunch

Grilled Halloumi Cheese in Basil Pesto with Organic Quinoa, Grilled Cherry Tomatoes, Button Mushrooms, Sugar Snaps, Rocket and Pine Nuts
Serve cold or heat in the microwave for 4-5 minutes
Afternoon Snack

Coriander Hummus with Carrot Crudités
Evening Meal

Coconut Marinated Chicken with Baby Potatoes, Mexican Red Kidney Beans, Sweet Corn and Fine Bean Salsa
Heat in the microwave for 4-5 minutes until piping hot
